Merry Salad

I want to share with you a merry recipe that combines exquisite flavors and a touch of culinary magic. On our plate, we have a salad of roasted squash, tender sweet potatoes, crunchy red onions, sparkling pomegranates and fresh mint, all topped off with rustic wild rice. This salad embodies the spirit of the holiday season, harmoniously combining colors, textures and tastes. It is ready to brighten up our taste buds and enrich our table with happiness. Ingredients:

  • 1/2 butternut squash, diced
  • 2 sweet potatoes, diced
  • 1 red onion, chopped
  • The seeds of a pomegranate
  • A few fresh mint leaves, chopped
  • 1 cup wild rice, cooked according to package directions
  • 3 tablespoons of olive oil
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions:

  • Preheat your oven to 375°F.
  • In a large bowl, mix the diced squash and sweet potatoes with 2 tablespoons of olive oil, salt and pepper. Spread them on a baking tray and roast them in the oven for about 25-30 minutes or until tender and lightly browned.
  • Meanwhile, prepare wild rice according to package directions. Once cooked, let it cool.
  • In another bowl, mix the chopped red onion, pomegranate seeds and chopped mint leaves.
  • In a small bowl, prepare the vinaigrette by mixing the lemon juice, 1 tablespoon olive oil, salt and pepper.
  • Once the roasted vegetables and wild rice have cooled off, add them to the red onion, pomegranate and mint mixture.
  • Pour the dressing over the salad and toss well to coat all the ingredients.
  • Serve your squash, sweet potato, red onion, pomegranate, mint and wild rice salad alongside your favorite festive dish. Treat yourself!
