Summer Gazpacho

Ingredients:

  • 2 pounds ripe Roma tomatoes, coarsely chopped (any other type of tomatoes works as well)
  • 1 small cucumber (1/2 pound), peeled and chopped
  • 1 medium green bell pepper, seeded and chopped
  • 1 small red onion, peeled and chopped
  • 3 small garlic cloves (or 1 large clove), peeled and minced
  • 3 tablespoons olive oil
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon sea salt
  • 1 teaspoon freshly cracked pink pepper
  • 1 teaspoon ground cumin

***Optional Garnishes: Chopped fresh herbs (such as basil, dill, etc.), a drizzle of olive oil, or any leftover chopped gazpacho ingredients

Instructions:

  1. Purée. Combine all ingredients in a blender or food processor. Blend for 1 minute, or until the soup reaches a smooth, desired consistency.
  2. Season. Taste and season with extra salt, pepper, and/or cumin if needed.
  3. Chill. Store in an airtight container in the refrigerator for 3 to 4 hours, or until the soup is completely chilled.
  4. Serve. Serve cold, topped with your choice of garnishes.
